We’ve been pickling, fermenting and preserving all manner of foods and liquids since around 7000BCE, with the likes of kombucha originating in China around 220BCE. It didn’t spread to Europe until trade expansion in the early 20th century, however, and it wasn’t until a Swiss doctor compared its health benefits to yoghurt in the ’60s did public awareness of the beverage start to increase.
