Tea wasn’t consumed until the 4th century, where, under the Tang Dynasty in south Asia, it was heavily praised for its medicinal properties. When Portuguese monks introduced tea blends to Europe in the 16th century, it became insatiably popular and - along with coffee - replaced alcohol as the primary breakfast beverage. Tea is still the most widely consumed drink in the world, second only to water which has no equal.
With such an impossible variety of styles and flavours, tea blending has been a highly regarded discipline in Asian cultures for thousands of years. Blended teas are among the most popular today, with favourites such as English Breakfast, Earl Grey and Russian Caravan all being blends of black teas and oils. To effectively blend tea, many sommeliers use ingredients such as oils, fruits and rinds, and even techniques such as smoking and rum-soaking to achieve the desired flavour and feel.
