Anna Eden, founder, owner and chief flavour designer of The Classic Cupcake Co. is no stranger to the baking scene. Her treats have been served to the likes of the Royal Family and multiple A-List celebrities, so you know they’re bound to impress.

Her secret? Combining the finest ingredients like locally-sourced free-range eggs and the most exquisite Callebaut chocolate, with her grandmother’s go-to cake recipe. The same recipe that she founded The Classic Cupcake Co. with back in 2012. 

Don’t worry, her secrets aren’t hers to keep. In fact, she founded a Baking Academy just minutes from her bakery in Mosman dedicated to teaching how you too can make drool-worthy sweets.

“23 years ago when I was living in LA writing music and running wrap parties for shows. The actors needed catering, and that's where it all began.”

“When I arrived in Sydney with a six-week-old baby and a business plan! I had been running a catering company for 12 years in London but when I moved to Australia I gave up the savoury to focus on the sweet.”

My top tip for first-time bakers is…

“Work with quality ingredients, the best that you can afford. That way you create less, but create with a better starting point.”

My go-to cake is…

“Classic, elegant and unfussy. Minimum input with a maximum effect.”

Cake or cupcakes?

“Cupcakes always—I like mini versions of anything! I prefer a little bit of everything rather than too much of one thing.”
