In this beginner-friendly class, you will be guided through the step by step process of making various Vietnamese seafood dishes by expert chef Tracey Lister. You will learn about the history of Vietnamese cuisine, and new cooking techniques to help you create delicious flavourful food time and time again.
On the menu:
  • Spring rolls with mackerel braised in soy and pickled vegetables
  • Prawn and sweet potato cakes with classic dipping sauce
  • Squid and pomelo salad
  • Marinated fish in banana leaf
You'll finish this cooking class with a sit-down meal and the opportunity to mingle with your loved ones and fellow cooks!

Chef Tracey is a classically trained chef who after many years of working at senior level in the vibrant Melbourne restaurant scene moved to Hanoi to immerse herself in Vietnamese and Asian cuisine. She helped establish KOTO, a grass-roots charity that helps street kids to free themselves from the cycle of poverty through hospitality training.
In April 2008 she opened the Hanoi Cooking Centre, voted one of the best cooking schools in the world by Leisure & Travel magazine.
Now back in her old stamping ground of Brunswick, Tracey looks forward to sharing her love of good food through her cooking classes for keen home cooks, professionals, corporates, kids and teens.
And if you don’t have time to cook call in at Brunswick Kitchen for a chat and a take-home meal.
