There is a long tradition of vegan cuisine in the pagodas of Vietnam where the nuns and monks follow a strict diet. It is also not unusual for people to abstain from eating meat and fish on the 1st and 15th of the lunar month to bring good luck to themselves and their families.
Chef Tracey will take you through some vegan dishes suited to Melbourne’s cooler Autumn days, including dishes prepared by the nuns at a Hue pagoda on the banks of the Perfume River. The menu will include:
  • Fried taro spring rolls
  • Tofu and turmeric in betel leaf with rice noodle pillows
  • Cabbage rolls filled with mushrooms and mung bean noodles
And to finish, a sweet soup of coconut, black sesame and peanuts scented with pandan leaf.

Chef Tracey is a classically trained chef who after many years of working at senior level in the vibrant Melbourne restaurant scene moved to Hanoi to immerse herself in Vietnamese and Asian cuisine. She helped establish KOTO, a grass-roots charity that helps street kids to free themselves from the cycle of poverty through hospitality training.
In April 2008 she opened the Hanoi Cooking Centre, voted one of the best cooking schools in the world by Leisure & Travel magazine.
