Embrace your inner chef at this hands-on Vietnamese cooking class in Melbourne and learn new skills to make delicious vegan meals from scratch!
There is a long tradition of vegan cuisine in the pagodas of Vietnam where the nuns and monks follow a strict diet. It is also common for people to abstain from eating meat and fish on the 1st and 15th of the Lunar Month to bring good luck to themselves and their families.
In this class, Chef Tracey will take you through some vegetarian dishes she particularly enjoyed during her years in Vietnam.
You will cook a menu of smoky eggplant with Thai basil and rice crackers, Taro and sweet potato croquettes, green papaya spring rolls, coconut and sesame dipping sauce, and tofu and sweet potato curry.

Chef Tracey is a classically trained chef who after many years of working at senior level in the vibrant Melbourne restaurant scene moved to Hanoi to immerse herself in Vietnamese and Asian cuisine. She helped establish KOTO, a grass-roots charity that helps street kids to free themselves from the cycle of poverty through hospitality training.
In April 2008 she opened the Hanoi Cooking Centre, voted one of the best cooking schools in the world by Leisure & Travel magazine.
Now back in her old stamping ground of Brunswick, Tracey looks forward to sharing her love of good food through her cooking classes for keen home cooks, professionals, corporates, kids and teens.
