You may have seen Louisa's cookbook, Very Good Falafel and tasted the delicious salads, so now Louisa is going to share her trade secrets of how to recreate these delicious dishes at home.
In this class, you will learn how to make a variety of delicious vegetables and salads, perfect for spring and learn how to transform ordinary vegetables into meals packed with flavour!
On the menu:
  • Smoked eggplants with focaccia and mint
  • Stuffed silverbeet leaves in tomato cinnamon sauce
  • New season artichokes, broad beans and peas with harissa and cumin
  • And to finish blood orange, green chilli and black olives
By the end of the class, you can sit back and relax, enjoying all the food you've made!

Chef Tracey is a classically trained chef who after many years of working at senior level in the vibrant Melbourne restaurant scene moved to Hanoi to immerse herself in Vietnamese and Asian cuisine. She helped establish KOTO, a grass-roots charity that helps street kids to free themselves from the cycle of poverty through hospitality training.
In April 2008 she opened the Hanoi Cooking Centre, voted one of the best cooking schools in the world by Leisure & Travel magazine.
Now back in her old stamping ground of Brunswick, Tracey looks forward to sharing her love of good food through her cooking classes for keen home cooks, professionals, corporates, kids and teens.
