All cultures use pulses and beans as they are high in protein and full of polyphenols which can have anti-inflammatory properties. They’re high in fibre, naturally gluten-free and also contain calcium, iron, potassium and folate.
From soups to curries to stews to dips to pastry and even sweet cakes this humble pulse provides so much variety and flavour. Yet we don't make use of them nearly enough. Eating beans and pulses are better for the environment and our health but people are often mystified by the humble lentil and how to prepare a satisfying vegan meal from scratch quickly.
This class will take you through the easy steps to make a delicious lentil 'tofu' a sort of cross between tofu and polenta which can be fried and served up as a delicious starter or used to accompany a curry. We will also discuss other recipes and uses for the humble lentil in our cooking.
We will also make a simple dahl packed with spices and fry up some poppadoms because - yes they too are made of lentils!
