"Food is a major part of our culture, it’s a way to show others that you care" - Rana
Roll up your sleeves - it’s time to get messy! Join Rana from Iraq for an authentic, immersive cooking experience, as she takes you on a journey through her recipes, traditions, and stories as you cook a beautiful feast together. And when the cooking is done, all that is left to do is enjoy the wholesome feast.
Rana believes that cooking for loved ones is a form of healing. A type of culinary medicine for both chef and guests alike. “Food is a major part of our culture, it’s a way to show others that you care, ” she says. Growing up, Rana remembers her mother making huge meals – more than enough for her own family – of which she’d always send a dish to their neighbours. And those neighbours would respond in culinary kind. “Baghdad was full of many ethnicities and cultures, so we learned a lot from each other through sharing food.”
Rana’s recipes are a testament to her heritage, travelling with her from Iraq to Australia to bring you a menu brimming with both flavour and stories! There’s her Ras Asfoor, meatballs infused with spices and tangy dried lemon in a rich tomato sauce and of course her dolma, the crown jewel of Iraqi cuisine. Her borek are filled with sautéed meats and served with a refreshingly zesty yoghurt sauce. Rana’s Sim simiya, toasted sesame bars, swirled with tahini, honey and a hint of cardamom are the perfect ending.
