Chinese food has enriched Australian palates since the days of the gold rush from the 1970s and 1980s to even now.
In this class, chef Tracey will take you through her interpretations of some classic Chinese dishes, including sesame prawn toasts, fried free range eggs with oyster sauce and chilli (a brunch favourite!), steamed fish with ginger and spring onions, crispy skinned pork belly with black vinegar and roasted peanuts and eggplant with garlic and rice wine.
By the end of the class, sit back and enjoy the delicious Chinese feast you've made!

Chef Tracey is a classically trained chef who after many years of working at senior level in the vibrant Melbourne restaurant scene moved to Hanoi to immerse herself in Vietnamese and Asian cuisine. She helped establish KOTO, a grass-roots charity that helps street kids to free themselves from the cycle of poverty through hospitality training.
In April 2008 she opened the Hanoi Cooking Centre, voted one of the best cooking schools in the world by Leisure & Travel magazine.
Now back in her old stamping ground of Brunswick, Tracey looks forward to sharing her love of good food through her cooking classes for keen home cooks, professionals, corporates, kids and teens.
