Be transported to central Vietnam from Brunswick Kitchen at this hands-on Vietnamese cooking class!
Seafood features heavily in the cuisine of central Vietnam, with small round basket boats heading out daily into the South China Sea to sell their catch at the local Hoi An market.
The cuisine also draws influences from Thailand due to its proximity, so if you like more heat, central Vietnamese food is for you.
Dishes featured in this hands-on class include Hoi An Spring rolls with mackerel poached in master stock, pickled cabbage with hot mint, classic dipping sauce, water spinach salad with herbs and crispy shallots, smoky eggplant with dried shrimp and squid filled with pork and mung bean noodles.
At the end of the class, enjoy all of your central Vietnam dishes and return home with new cooking skills and confidence.

Chef Tracey is a classically trained chef who after many years of working at senior level in the vibrant Melbourne restaurant scene moved to Hanoi to immerse herself in Vietnamese and Asian cuisine. She helped establish KOTO, a grass-roots charity that helps street kids to free themselves from the cycle of poverty through hospitality training.
In April 2008 she opened the Hanoi Cooking Centre, voted one of the best cooking schools in the world by Leisure & Travel magazine.
Now back in her old stamping ground of Brunswick, Tracey looks forward to sharing her love of good food through her cooking classes for keen home cooks, professionals, corporates, kids and teens.
