As the weather starts to cool, a bounty of delicious Autumn produce becomes available at the market. This Melbourne cooking class is the perfect opportunity to learn how to make the most of this season in your dishes.
In this beginner-friendly class, we make the most of the short-lived chestnut season with a Portuguese-inspired dish of chicken braised in Port with chestnuts and pears. Grapes are paired with fennel seeds in a Tuscan focaccia, and eggplant and pomegranate are turned into a delicious salad.
Finally, apples are at their peak and so we will finish with everyone’s favourite: a traditional apple pie and vanilla ice cream.
Once the cooking is finished, you will spend the end of the class enjoying a glorious feast around the communal table, chatting with old or new friends!

Chef Tracey is a classically trained chef who after many years of working at senior level in the vibrant Melbourne restaurant scene moved to Hanoi to immerse herself in Vietnamese and Asian cuisine. She helped establish KOTO, a grass-roots charity that helps street kids to free themselves from the cycle of poverty through hospitality training.
In April 2008 she opened the Hanoi Cooking Centre, voted one of the best cooking schools in the world by Leisure & Travel magazine.
Now back in her old stamping ground of Brunswick, Tracey looks forward to sharing her love of good food through her cooking classes for keen home cooks, professionals, corporates, kids and teens.
