Having just returned from a busman’s holiday, Tracey will share with you some of her favourite dishes of her time in Albania.
Nestled on the Balkan Peninsula, sharing land borders with Montenegro, Kosovo, Macedonia and Greece and with Italy only 80km across the Adriatic Sea, Albania draws on all these culinary influences.
We will start with fried goat's cheese with honey and sesame seeds and roasted bull peppers dolma and flatbread. Next, Tavi Kosi, lamb baked with yoghurt and egg, which is perhaps one of its most notable Albanian dishes. And for dessert, Tri Leche, a sweet cake made with three milks and a caramel topping.
Whether you're a complete beginner or have some cooking experience, everyone is welcome to join this class.
By the end, you can sit back and enjoy the delicious Albanian feast you made!

Chef Tracey is a classically trained chef who after many years of working at senior level in the vibrant Melbourne restaurant scene moved to Hanoi to immerse herself in Vietnamese and Asian cuisine. She helped establish KOTO, a grass-roots charity that helps street kids to free themselves from the cycle of poverty through hospitality training.
In April 2008 she opened the Hanoi Cooking Centre, voted one of the best cooking schools in the world by Leisure & Travel magazine.
Now back in her old stamping ground of Brunswick, Tracey looks forward to sharing her love of good food through her cooking classes for keen home cooks, professionals, corporates, kids and teens.
