Are you ready to learn the art of damper making from the world record holder himself, Ranger Nick?
In this hands-on and unforgettable workshop, you'll discover how to create the perfect iconic Australian bush bread! You will be using camp ovens and open fire for baking.
Don't worry if you're new to damper making or using a camp oven, this workshop is perfect for beginners. Award-winning Bush Cook Ranger Nick will guide you every step of the way, making sure you feel relaxed and confident throughout the process.
The groups are kept small to ensure personalised and individual attention. You'll be using simple ingredients and basic tools to craft your very own damper, all while enjoying the great outdoors and fellow participants. Get ready to get your hands dirty and have fun exploring this classic Aussie activity.
During the three-hour class, you will learn:
  • Brief history of the iconic Australian damper
  • How to bake the perfect damper in the great outdoors or in your kitchen at home
  • Heat control using Charcoal Briquettes
  • Fire Safety in the great outdoors
  • Pre-heating your oven and identifying optimal heat
  • Tricks to assist in preparing the dough
  • How to turn your traditional damper into a gourmet damper
You will be provided with:
  • Bowls and spoons
  • All ingredients to create a basic traditional damper
  • A variety of ingredients to choose from, which you can add to your basic dough, hence creating your personal touch of flavour
  • Camp oven(s) to bake in
  • A Ranger Nick apron for you to keep
  • Ranger Nick's book "World of Dampers - 101 Damper Recipes", signed by the author and yours to keep
Once the damper is baked, you may choose to sit around the fire and consume your damper with butter, honey, golden syrup, or take it home to share with family and friends.
We wrap up with a yarn or two around the fire and welcome your feedback on the experience.

Who am I and how did I get started?
Raised in the scrub of SW Queensland, being the youngest in the family of ten, I learned to cook in the camp ovens up the paddock, whilst out working with the ol’ man.
At the age of 28 years, I was involved in an accident, which left me without movement in my legs for about 10 months. This led me to studies in Heritage and Interpretive Tourism and resulted in Ranger Guiding at Skyrail International in North Queensland.
Having an affinity with the great outdoors and interest in Botany, I acquired accreditation in archery, canoeing, high ropes, abseiling and vertical rescue.
After working as a Unit Support Officer in Environmental Education and Outdoor Recreation within Education Queensland for 10 years, I have been professionally demonstrating camp oven cooking since 2010, travelling the country and abroad for a minimum of six months of the year. I am passing on my knowledge to school groups and fellow adventurers, teaching the art of bush skills, camp oven cooking and outdoor etiquette.
In 2019, I was involved in successfully claiming the World Record title for the Longest Damper at 153.002 metres, granting me a place in the Guinness Book of Records.
Known as the Aussie entertaining Bush Cook, I am the resident bushcook on Channel 7Mates “Step Outside with Paul Burt”, am involved in weekly radio segments on “West Bremer Radio”, monthly podcast interviews and am the author of four books. Producing my own brand of merchandise, I have also released a DVD, developed a comprehensive Outdoor Training Program and get frequently invited to judge at large camp oven cooking competitions.
Travel restrictions and event cancellations during Covid have inspired me to launch a new product line – Curry Spice and Recipe Kits – encouraging you to eat healthy and boost your immune system. It is designed to be family friendly with super easy cooking methods, where you are in control of the heat level. The kits are free of any additives, blended and portioned to make a meal of four, which eliminates the purchase of exotic spices you hardly ever use.
Over a twelve months period, I recently received three major Business Award recognitions, winning the the Australian Owned Achievement Award, taking home a trophy for the Innovation and Sustainability Excellence category of The Australian Rural Business Awards and being a finalist in the Australian Small Business Champion Awards.
